i currently only have 2, the all in SEO one and the google sitemap one

Depends what you want your site to offer.

Those two are must haves IMHO. What else would you like to offer your viewers?

I find these can be useful:
Sticky
db-backup
cforms
add to any.

google analytics
seo for images
comment approved notifier
