I think you want to change the CNAME to that of the host you wish to point too. 301 isn't really the thing to use.... Thats like saying "This page has been moved and can now be found at this address"... But it would do the job.
IP Web Forwarding isn't a technical term as such (not quite sure what's happening behind the scenes) but if you're only options are those three I'd try it.

The website it's being redirected to isn't mine. It's one that we are using as an affiliate, but we are putting the boxby brand on it, with a boxby-parcels logo. I have the boxby-parcels domains registered and would like to use them in the best way. Whatever that may be.

How are you going to promote the parcels domain? do you intend marketing it via the web, and are you hoping to get search engine traffic to it?
Mainly, through the boxby website. Promote the boxby website as a whole, and then this will be linked off the home page, and off a dedicated sub home page for parcels, pallets & freight. THe boxby site is to be SEO'd for parcels.
I guess that i'll be using the boxby-parcel domain to direct people straight to the parcel website to. I don't envisage listing it in directories etc. I don't envisage marketing the domain under its own name (parcelone) because it's not actually my website.
Cool, then in that case, use the framed forwarding that frames the target site inside the boxby-parcels.co.uk domain wrapper. That will be the url people see.
Be aware that it can cause issues if people bookmark the page they are on, as the whole of the site is effectively on the index page within a frame.
Depending how they track you as an affiliate you might not want to use a Framed Forwarding redirect because the frame might drop your affiliate cookie, and you will lose sales credits.
IE7 by default won't accept 3rd party cookies. Secondly, the frame might be a source of annoyance during any SSL checkout, as you'll have both safe and non-safe pages.
During the building of my affiliate sites frames were an issue, so always tried steering clear of using them because it kept costing me money in lost sales. Personally, I'd hide the affiliate link, if that is what you have (?) inside the htaccess file.
