All the tools are to an extent, guessing. I'm a fan of Wordtracker but also use keyworddiscovery. I guess for pure Google data then their free keywordtool would be the best but this won't give you numbers. There are no tools that will give you the exact number of Google searches.
As an aside Google Analytics can be a gold mine for keyword research.

I use Analytics quite a lot to.
I take some of the keywords that I find sending traffic that I hadn't actually targeted and put them into Rank Checker to see where I rank.
It's easier to push a keyword that you've already started to rank on the second page onto the first page than it is to start with a new keyword.
